The Collagen Connection

Vitamin C acts as a cofactor for the proline and lysine hydroxylases that stabilise the collagen molecule's tertiary structure, and it also promotes collagen gene expression. Without adequate Vitamin C, the hydroxylation process that forms stable collagen cannot occur.
